I can see your point here but as you would expect my opinion varies slightly. As it is now, my Tanking gear is acceptable DPS gear, I would guess I am about 75% of what I would be doing in DPS gear. Personally I like this makeup as I mostly run in Tank gear even if I am not the tank, it allows me to be more of a Hybrid. My Tank gear has more Mana and if we get into a problem I can switch to bear and help out. I will only wear DPS gear if the fight specifically needs to be done as fast as possible.

See I think here is my main issue. I love Hybrid gear, there is nothing wrong with it and it has its place. The issue is its ALL Hybrid gear or Cat gear. Now don't get me wrong here, Cloaks, Rings, Trinkets and Weapons are fine and cater well for tanking, but other than that its all a mixed bag. Hybrid gear, in general, will be poor as a DPS piece when compared to "Rogue" gear. The main exceptions to this are where 2 piece bonus's come into play.

That's it really, there needs to be some itemisation for tanks. Honestly I would really like to see tank specific gear with lots of sockets. I think the sockets could replace the Stats and actually allow you to customise the piece for your style of play. By "Lots" I am thinking 3 or 4 per piece.

Not really, the sockets are just replacing the stats that the item may have. Now admittedly this could be hard to balance out, since I would think you would base it on using Blue quality Gems, so if you use Epics in the sockets the item actually becomes better than it should be. Then if you balance it with Epics in mind, those players that do not have access to them will get weaker gear, which I guess actually makes a little sense. Then again I am sure Blizzard already has iLvl values for socket colours anyway.
