I was thinking about 5-boxing again recently, which is something I would still love to do but I know it's not going to happen, and about having the whole team as a single class. There are only a few classes that can pull this off. Looking at PVE play, the Druid is the only one that can pull it off fully.
The Druid Trinity.
With a Feral Tank, 3 Balance Druids and a Resto Druid, you have a great PVE team. This would be the easiest team to run. If I was to 5-box, I would be very tempted to roll another 3 druids just so I could do this. With this team you could handle any 5-man in the game, normal and heroic.
Panzakin?
I would say you could simplify things a little and go for 4 Balance Druids and a single healer. It may be a little harder on the healer, but leveling would be a lot simpler and easier. I would expect that all the Normal 5-mans would be fairly easy with some of the heroics being possible.
Paladin Trinity?
Honestly, though it is no doubt possible, I think this would be a pain in the butt to play. It would be pointless having more than one Tank which leaves three Ret Pallies. Melee classes are still difficult to manage and with the seals and judgments this would be a real challenge. Assuming you could pull it off though, you would be able to complete all the 5-mans in both Normal and Heroic.
Shammies?
In WotLK, there were a few full Shammy teams completing 5-man heroics. Using sheer burst damage, I would say most Normal Instances would still be possible along with 1 or 2 heroics. I have a feeling that you would need to out gear the instance though, either with Raiding or PVP gear.
Thinking Outside the Box.
The obvious choices for 5-boxing the one class are the Hybrids, especially ones that can heal. Still I think there are other combinations that could also pull this off.
Hunters.
Five BM Specced hunters should be able to complete all the normal and heroic 5-mans. I am not sure about the pets that would be needed but I would think it would be either five Hybrid DPS/Tank pets or one Tank with four DPS pets. The Hybrids would probably be more viable though and just tank until they die, or if you are lucky, bounce tank.
Warlocks....
I do not know much about Locks but I would expect you could manage this as well. Five Demonology Specced locks should be able to handle all normal and most heroic instances.
Burst Groups?
I would expect that most casters could handle a Burst group to a point. Though I would not expect them to be as strong as a Shammy team. Five Mages or Priests should be able to handle most normal instances.
Hmmmm....
This has got me thinking. If I had to recommend a class to a new player, regardless of solo or boxing, it would have to be the Druid. Most people do not stick to their first class, but at least with the Druid, you can play a little bit like so many other classes that you would get an idea about what class you would enjoy the most.

Well I got curious last week and started another 4 shammies which I have been boosting with my 70 shammy, so I will be able to tell you soon as to the success of that.
I have noticed that a few shammy boxers have put a tank out the front for Wrath 5 mans.
But...
Now you have me thinking about getting all boomferal and making a 5 druid team!
God there goes the next 6 months of my life! :-P
I hate you just a little Noctiluca... though you do realise that if I was 5-boxing, we would be doing Naxx!

I think you just need to marry into wealth so you can be kept in the way in which you wish to become accustomed to and multibox till your hearts content.
